During the cold and flu season, my family and I rely heavily on Elderberry Syrup and Elderberry Gummies. Children and adults alike don’t necessarily enjoy taking medicine because it tastes horrible. However, these Elderberry Gummies are yummy!

More importantly, I know exactly what I’m putting in my and my family’s bodies to fight off the cold and flu germs!

I have been asked multiple times since I first shared my elderberry recipe for a Vegan option. So I am thrilled to share this Vegan Elderberry Instant Pot Gummies recipe with you!

Sometimes I sit and think about all the time and money I’ve wasted on over-the-counter (OTC) medicines. UGH! If I would have known then what I know now, who knows how rich I’d be. OTC medicine is not cheap! All I can do moving forward is continue to give myself and my family better options to fight those nasty germs!

I try to stay ahead of the flu BEFORE it enters my home, so preparing this recipe in advance is always a good idea. Why wait until you actually need it when you can take it to prevent it?

This is especially true when you learn that your kids’ friends or your friend’s kids are coming down with a cold or flu. My goal this year is for our house to remain flu-free and these Elderberry Gummies will help me achieve that goal!

Another natural barrier I use when taking on cold and flu season is essential oils. The combination of the oils and the elderberry seems to work like a charm and that is something that I couldn’t be happier about.

Before I continue, I’m not insinuating these gummies are fruit snacks, nor am I encouraging you to keep them in a bowl on the kitchen table to consume. However, I see nothing wrong with me and my boys eating one of these daily to keep those germs at bay!

They’ve even helped me prepare these a couple times. Their favorite part? Using the molds to create these adorable little gummies!

Ingredients

 

1 cup instant pot vegan elderberry syrup

2 tsp citrus pectin
2 tsp calcium water (follow the direction in the pectin package to make)
silicone gummy bear mold
dropper

Makes: 2 trays of gummy bears

1) Bring the elderberry syrup to a boil in either the Instant Pot using “Sauté” mode, or on the stove. TIP: I make my vegan elderberry syrup in the instant pot homemade.


2) Whisk in the pectin. Continue to whisk until the pectin is completely dissolved.


3) Next whisk in the calcium water. Continue to stir for 1 to 2 minutes.

4) Finally, use the dropper to fill the silicone gummy bear mold. The syrup will thicken as it cools. If it begins getting too thick as your filling the mold, try reheating the elderberry syrup to make it liquid again.


5) Let the gummy bears solidify in the refrigerator for at least 4 hours before removing from the mold. The longer the better.


6) Store the gummy bears in an air tight container in the refrigerator for 2 to 4 weeks. Take 1 to 2 a day as needed.

Notes:
* The recipe can easily be cut in half to make 1 tray of gummy bears.
* Store in the refrigerator. The gummy bears will soften into a jelly when warm.
* I did not need to use wax paper to separate the gummy bears into layers when storing them in the fridge. These gummy bears were not sticky at all. I found that they didn’t stick to each other unless they got too warm. So just keep them in the fridge as much as possible.

 

And there you have it. Talk about super simple, right? Easy enough to make ahead of time and have on hand!

I receive many questions about my recipes. I decided to share a couple of questions and answers in case you have the same question.

Once these vegan gummies are made, how long will they be good for?

Once made, store them in the fridge. They should be good for 2 to 3 weeks.

How many times per day would you give these elderberry gummies to a child?

Once per day should be an adequate amount. However, always consult your doctor first.

Vegan Instant Pot Elderberry Gummies
